Cold maceration for 12-24 hours. Fermentation and aging (7 months) in big wooden casks; conservation of the typical fruity aroma by particularly careful treatment of the grapes.
Bright straw-yellow. Multi-layered bouquet of exotic fruits; the good acidity level gives this Sauvignon his vivacious freshness especially expressed in the harmonious aftertaste.
Recommended as an accompaniment to fresh dishes like salad with fennel and goat cheese. Ideal as well in combination with fish dishes or asparagus variations.
